Πώς να παχύνετε χωρίς κόπο | How to take on weight effortlessly

Αν στο παραπάνω πιάτο προσθέσουμε 2 κουταλιές ελαιόλαδο, θα πάρουμε 480 αντί για 240 θερμίδες. Αν κανείς είναι υπέρβαρος τότε μια απλή κίνηση που μπορεί να κάνει για να χάσει βάρος χωρίς να πεινά είναι να αντικαταστήσει το λάδι/λίπος που καταναλώνει με πραγματικό φαγητό, π.χ. φασόλια με καστανό ρύζι. 

Half a cup of cooked beans plus 0.6 cup of brown rice yield the same amount of calories (240) as 2 tablespoons of fat/oil. If in the plate pictured above we add 2 Tbs of olive oil, we are going to get 480 calories instead of 240. Therefore, one simple change that one can make if they wish to lose weight without feeling hungry is to replace fats and oils (including olive oil, coconut oil, etc.) with real food, like rice and beans. Όλο και περισσότεροι γιατροί υποστηρίζουν ότι μια πλήρως φυτοφαγική διατροφή χωρίς επεξεργασμένα τρόφιμα αποτελεί την ιδανική επιλογή για την προστασία της υγείας μας (δείτε τη σχετική ενότητα "Γιατροί που υποστηρίζουν την βέγκαν διατροφή"). Σε δύο γραμμές, στην πράξη αυτό σημαίνει ότι η ιδανική διατροφή:
  • ΔΕΝ περιέχει ζωικά τρόφιμα
  • ΔΕΝ περιέχει επεξεργασμένα τρόφιμα (περιλαμβανομένου του ελαιολάδου)
Αν κάποιος κάνει τον κόπο να καταλάβει τους βασικούς κανόνες, τότε αυτή η ιδανική διατροφή, είναι απλή, φθηνή, και εύκολη στην εφαρμογή της. Το καλύτερο είναι ότι αυτή η διατροφή εξασφαλίζει την κατάλληλη ποσότητα φυτικών ινών, λίπους, πρωτεϊνης, υδατανθράκων. Δηλαδή, η ιδανική διατροφή, που όποιος την δοκιμάσει βλέπει ότι την κάνουμε χωρίς να μετράμε ποσότητες (τρώμε όσο θέλουμε, όποτε πεινάσουμε), και χωρίς να νιώθουμε πείνα (τρώμε μέχρι να χορτάσουμε), εξασφαλίζει:
  • τουλάχιστον 40-60γρ. φυτικών ινών
  • περίπου 10% των θερμίδων προέρχονται από λιπαρά
  • περίπου 10% των θερμίδων προέρχονται από πρωτεϊνη (και αυτό είναι παραπάνω από αρκετό, αν κανείς λαμβάνει όσες θερμίδες χρειάζεται)
  • περίπου 80% των θερμίδων προέρχονται από υδατάνθρακες
Ας δούμε τώρα πώς μπορούμε να καταστρέψουμε μερικές πολύ υγιεινές συνταγές προσθέτοντας λιπαρά (π.χ. ελαιόλαδο).

500 γρ. μανιτάρια
Αν σωτάρουμε χωρίς ελαιόλαδο: 110 θερμίδες, εκ των οποίων 15 προέρχονται από λίπος.
% θερμίδων από λίπος: 15/110 = 13,6%
Αν στο σωτάρισμα προσθέσουμε 2 κουταλιές σούπας ελαιόλαδο, προσθέτουμε 2x119 θερμίδες. Δηλαδή, τώρα το πιάτο μας έχει 348 θερμίδες, εκ των οποίων 253 προέρχονται από λιπαρά (ποσοστό θερμίδων από λίπος: 72,7%).

Σπανακόρυζο με 1 κιλό σπανάκι
Υλικά: 1 κιλό σπανάκι, μία κούπα ρύζι.
Αν τα μαγειρέψουμε χωρίς ελαιόλαδο: 910 θερμίδες (9% των θερμίδων είναι από λιπαρά).
Αν τα μαγειρέψουμε με 1 κουταλιά σούπας ελαιόλαδο: 1029 θερμίδες (20%)
Αν τα μαγειρέψουμε με 2 κσ ελαιόλαδο: 1149 (28%)
Αν το μαγειρέψουμε με 4 κσ ελαιόλαδο: 1387 (40%)

Σέσκουλα, 1 κιλό, βραστά ή στον ατμό
Χωρίς ελαιόλαδο: 320 θερμίδες όλο το κιλό (16%)
με 1 κσ ελαιόλαδο: 439 θερμίδες (39%)
με 2 κσ ελαιόλαδο: 559 θερμίδες (52%)
με 4 κσ ελαιόλαδο: 797 θερμίδες (66%)

100 γρ καστανό ρύζι με 100γρ κόκκινα φασόλια
Χωρίς ελαιόλαδο: 663 θερμίδες (4%)
με 1 κσ ελαιόλαδο: 783 θερμίδες (19%)
με 2 κσ ελαιόλαδο: 902 θερμίδες (29%)
με 4 κσ ελαιόλαδο: 1140 θερμίδες (44%)

Πατατοσαλάτα
Υλικά: μισό κιλό πατάτες, μία πράσινη πιπεριά, μισή κούπα ψιλοκομμένο άνηθο, μία κούπα ψιλοκομμένα φρέσκο κρεμμυδάκι

Χωρίς ελαιόλαδο: 509θερμίδες (3%)
με 1 κσ ελαιόλαδο: 628 θερμίδες (22%)
με 2 κσ ελαιόλαδο: 748 θερμίδες (34%)
με 4 κσ ελαιόλαδο: 986 θερμίδες (50%)

Να σημειωθεί ότι οι επιπλέον θερμίδες που παίρνουμε από τα λίπη/έλαια μας στερούν τη δυνατότητα να πάρουμε βιταμίνες, ίνες, μέταλλα, και άλλα χρήσιμα στοιχεία (π.χ. αντιοξειδωτικά) από τη διατροφή μας. Διότι, όπως και να το κάνουμε, ο αριθμός των θερμίδων που πρέπει να λαμβάνουμε ημερησίως μας θέτει έναν περιορισμό στο πόσες από αυτές μπορούμε να "πετάξουμε" σε τροφές με μικρό θρεπτικό περιεχόμενο (όπως είναι κάθε είδος λιπαρής ουσίας, περιλαμβανομένου του ελαιολάδου).

Διαβάζοντας τα παραπάνω, μπορεί κανείς να αναρωτηθεί: "μα... κάποιοι λένε ότι το ελαιόλαδο κάνει καλό, γιατί να το αποφεύγω;". Η απάντηση είναι η ακόλουθη: εξαρτάται τί είδους θερμίδες αντικαθιστάς με ελαιόλαδο. Αν για παράδειγμα αντικαθιστάς θερμίδες από ζωικό λίπος, τότε το ελαιόλαδο βελτιώνει την διατροφή σου. Αν αντικαθιστάς θερμίδες που περιέχουν βιταμίνες, μέταλλα, κ.λπ. (π.χ. από λαχανικά, όσπρια, δημητριακά), τότε χειροτερεύεις την διατροφή σου.

Με βάση τα παραπάνω, είναι εμφανές ότι είναι πανεύκολο να παχύνεις, ακόμα και αν τρως μεγάλες ποσότητες από υγιεινά τρόφιμα όπως π.χ. τα χόρτα. Αρκεί να προσθέσεις λάδι. Τόσο απλό.

The number of medical doctors who suggest that a fully plant-based, no processed foods is the best choice to sustain general health increases with time (see Section "Doctors promoting a plant-based diet). In two lines, the optimum way of eating: 
  • does NOT contain animal products
  • does not contain processed foods (oils, such as olive oil and canola oil included in the "processed" foods group)
This way of eating, once the basic principles are understood, is simple, cheap, and easy to follow. It gives us the necessary quantity of fiber, fat, protein, carbohydrates, and micronutrients (except B12 which needs to be taken from pills or fortified foods, such as nutritional yeast, breakfast cereals etc). Once a person gives a try to the optimal way of eating, he/she then understands that life is easier: there is no calorie counting, no hunger. One can eat, when, and as much as he/she wants to feel full. What a nice feeling! So, this way of eating naturally provides:
  • at least 40-60 grams of fiber
  • about 10% of calories come from fat
  • about 10% of calories come from protein (and this is more than enough, if you eat the calories you need)
  • about 80% of calories come from carbohydrates
Let us turn now to some very healthy recipes, and essentially destroy them (and our diet) by adding extra fat, e.g. canola oil or olive oil.

500 grams button mushrooms
If we sautee them with water: 110 calories, of which 15 calories come from fat molecules. This gives us % of calories from fat equal to 15/110 = 13,6%
If we sautee them with 2 Tablespoons of olive oil, we add 2x119 calories. That is, we now get 348 calories, of which 253 come from fat molecules (the percentage of calories from fat is now 72,7%).

Spinach with rice (traditional Greek food)
Ingredients: 1 kg spinach, 1 cup brown rice
Cooked without oil: 910 calories (% calories from fat = 9%).
Cooked with 1 κουταλιά σούπας ελαιόλαδο: 1029 calories (20%)
Cooked with 2 tablespoons olive oil: 1149 (28%)
Cooked with 4 tablespoons ελαιόλαδο: 1387 (40%)

Collard greens, 1 kilogram, boiled or steamed
Without added oil: 320 calories όλο το κιλό (16%)
dressed with 1 tablespoons olive oil: 439 calories (39%)

Without added oil: 663 calories (4%)
with 1 tablespoons olive oil: 783 calories (19%)
with 2 tablespoons olive oil: 902 calories (29%)
with 4 tablespoons olive oil: 1140 calories (44%)

Potato salad
Ingredients: 500 grams potatoes (steamed or boiled), one green bell pepper, 0.5 cup chopped dillweed, 1 cup chopped spring onions
without added oil: 509 calories (3%)
dressed with 1 tablespoons olive oil: 628 calories (22%)
dressed with 2 tablespoons olive oil: 748 calories (34%)
dressed with 4 tablespoons olive oil: 986 calories (50%)

It should be understood that the calories we get from added fats and oils reduce our ability to get vitamins, fiber, minerals, and other useful micronutrients (such as antioxidants) through our everyday diet. This is so because we have a limit to how many calories we can consume without increasing our weight. An average is 2000 calories per day. In these calories, we should pack as many useful nutrients as we can. Added oil does not provide fiber, vitamins, minerals, and may provide just traces of micronutrients, compared to other forms of foods, which are richer in nutrients - even olives are more nutrient-rich than olive oil. Therefore, the addition of oils to otherwise healthy foods limits our ability to get the maximum nutrition from our 2000 calories.

The above may invite the question: "but... I thought olive/canola oil is beneficial, why should I avoid it?". The answer is: it depends on what kind of calories you forego when you eat calories from olive oil. If you forego calories from animal fat, the addition of olive oil improves your diet/health. If you are already on a plant-based diet, hence there is no animal fat in your diet, then the addition of olive oil reduces your potential intake of nutrients found in healthy stuff (vegetables, potatoes, beans, grains).

What follows from the above is that it is very easy to get fatter even if one consumes large quantities of healthy foods, e.g. greens. Just add some olive oil on your dish. As simple as that.
